Apple Galette
INGREDIENTS
For the pastry
125 gm flour
¼ teaspoon sugar
1 tablespoons sugar
A pinch of salt
2 tablespoons iced water
For the filling
450 gm apple, peeled, cored and cut into thick slices
4 tablespoons sugar
⅛ teaspoon ground cinnamon
⅛ teaspoon freshly grated nutmeg
¼ cup almond flakes, finely chopped
1 egg, beaten and mixed with 1 tablespoon water
1. Preheat the oven to 190ºC/375 ºF.
2. For the pastry. Mix the flour, 1 tablespoon of sugar and salt together. Rub in the butter until the mixture resembles fine breadcrumbs.
3. Stir in 2 tablespoons of iced water. Mix to a firm dough.
4. Wrap in a clingfilm and chill for 1 hour.
5. Meanwhile, to make the filling. Put the sliced apples in a mixing bowl, add in 4 tablespoons of sugar, cinnamon and nutmeg. Mix well.
6. Roll out the pastry and line a 22cm greaseproof baking paper.
7. Brush all over with egg wash.
8. Arrange the apples in the centre of the pastry round.
9. Fold the border of pastry over the apples, pleating the edges to fix it .
10. Brush egg wash along the edges.
11. Sprinkle the almond flakes evenly over the cake.
12. Bake for about 25 minutes, or until golden.
13. Serve hot.
