Apricot Treat

Fresh fruit was once scarce in Poland during winter, so dried fruits were often used. This rich apricot and almond dessert, a favourite in Poland, resembles the sweetmeats more common to the Balkan regions.
INGREDIENTS
Serves 6
225 gm / 1 cup ready-to-eat dried apricots, chopped
45 ml / 3 tablespoons water
50 gm / ¼ cup caster sugar
50 gm / ½ cup almonds, chopped
50 gm candied orange peel, chopped
icing sugar, for dusting
whipped cream, to serve
ground cinnamon, to decorate
1. Put the apricot and water in a heavy-based pan. Cover and simmer, stirring, for about 20 minutes, until a thick paste forms.
2. Stir in the caster sugar and simmer, stirring, for a further 10 minutes until quite dry. Remove from the heat and stir in the almonds and chopped orange peel.
4. Leave to dry in a cool place for at least 3 hours.
5. To serve, cut into slices and serve with whipped cream, sprinkled with a little cinnamon.
