Boodles Orange Fool
About Fruit Fool
Fruit fool is a classic British dessert, dated as early back as the 16th century. It is a mixture of sweetened fruit puree, whipped cream and whipped egg whites. It is usually enjoyed during fresh fruits are in seasons.
INGREDIENTS
Serves 4
4 trifle sponge cakes, cubed
300 ml / 1¼ cups double (heavy) cream
30 – 60 ml / 2 – 4 tablespoons caster (superfine) sugar
grated rind and juice of 2 oranges
grated rind and juice of 1 lemon
orange and lemon slices and rind, to decorate
strawberries, to decorate
1. Line the bottom and halfway up the sides of a large glass serving bowl or china dish with the cubed trifle sponge cakes.
2. Whip the cream with the sugar until it starts to thicken, then gradually whip in the fruit juices, adding the fruit rinds towards the end.
3. Carefully pour the cream mixture into the bowl or dish, taking care not to dislodge the sponge. Cover and chill for 3 – 4 hours.
4. To serve, decorate with orange and lemon slices and rind and strawberries.

Watchpoint:
Take care not to overwhip the cream mixture, because it will be hard to blend in with the fruit.
