Brownies with Cocoa Glaze

About Brownies

Brownie is a small, rich, chocolate, baked cake-slice, named after its rich brown colour. It is sometimes covered with fudge and may contain nuts, chips. Brownies often have an icing, popular flavours being chocolate icing or a sugar based icing flavoured with either vanilla or mint extract.

The brownie was invented by the chef at the Palmer House Hotel in Chicago during the 1892 Columbian Exposition. Bertha Palmer requested a dessert to put in box lunches for ladies that would not get their hands dirty.
These brownies with cocoa galze are so chewy and moist you will swear they are real fudge brownies.



About Applesauce

Applesauce is a sauce that is made from stewed and mashed apples. Sometimes, apple sauce is sweetened with sugar or high fructose corn syrup; sometimes it is pure. It can used peeled or unpeeled apples and a variety of spices or additives like cinnamon. Applesauce can be fine or coarse textured, even to including large chunks of apple. It is easily produced at home, and commercial versions are readily available in the supermarket as a common food or as a snack for children and seniors with dentures.
In UK, apple sauce is not usually served as a dish on its own, but, as the name variant suggests, as a sauce. This usually accompanies a main course meat, and is most often paired with harm, pork, or gammon.

Applesauce is often used as food for babies, since it does not require the use of teeth. It is sometimes recommended to combat diarrhea, since it is high in dietary fiber.
The word “Applesauce” was a slang term frequently used during the 1920’s, meaning “oh no” or “darn”.




INGREDIENTS
Makes about 30 Brownies

For the brownies
2¼ cups natural cane sugar
1½ cups all-purpose flour
1½ cups low-fat cocoa powder
1½ teaspoons baking powder
1½ teaspoons baking soda
1/8 teaspoon sea salt
1 1/3 cups unsweetened applesauce
1 cup / 8 oz low-fat silken tofu
¾ cup 1% cocoa soy milk
2 egg whites
2 teaspoons vanilla extract
½ cup raisins (optional)
canola oil cooking spray


For the glaze
1 cup low-fat cocoa powder
1½ cups rice syrup, liquid fruit sweetener or honey
2 teaspoons vanilla extract
1 vanilla bean, optional



1. Preheat the oven to 350 degrees Celsius.

2. To make Brownies, sift sugar, flour, cocoa powder, baking powder, baking soda and salt into a large mixing bowl.

3. In a food processor, combine apple sauce, tofu, soy milk, egg white and vanilla and process until smooth.

4. Stir tofu mixture into dry ingredients until there are no lumps. Gently stir in optional raisins.

5. Lightly spray a 10 x 15 inch baking dish with cooking spray.

6. Pour mixture into prepared dish and spread evenly.

7. Bake for about 45-55 minutes or until a toothpick inserted in the center comes out clean.

8. Cool in pan before glazing.

9. To make Glaze, place all ingredients except vanilla bean in a food processor fitted with a metal blade and blend thoroughly.

10. If using vanilla bean, spilt it lengthwise and use a sharp knife to scrape seeds into mixture. Process again for 30 seconds.

11. Pour glaze over brownies. Cut into 2 x 2 inch pieces. Serve.


Tips:

Reserve the used vanilla bean pod to flavour another recipe; wrap it airtight and freeze.
