Cherry and Almond Wafers

About Wafer

A wafer can refer to a crisp, sweet, very thin, flat, and dry cake that is often used to decorate ice cream. Wafers can also be made into cookies with cream flavouring sandwiched between them. They frequently have a waffle surface pattern.



About Cherry and Almond Wafers

These crunchy wafers are ideal with all sorts of creamy desserts or after-dinner coffee.


INGREDIENTS
Makes 30 wafers

Oil or butter, for greasing
3 egg whites
125 gm caster sugar
225 gm plain white flour
100 gm flaked almonds
50 gm whole unblanched almonds
150 gm glacé cherries, roughly chopped



1. Preheat the oven to 180 degrees Celsius or 350 ºF. Lightly grease a loaf tin measuring about 19 X 12 X 9 cm

2. To make a meringue mixture, in a large, clean bowl, whisk the egg whites until they form soft peaks.

3. Add the sugar 1 tablespoon at a time, whisking well after each addition.


4. Sift the flour over the top, add the flaked and whole almonds and glacé cherries and fold them in.

5. Spoon the mixture into the tin and level the surface. Bake for 25 minutes, or until the loaf is pale golden on top and just firm to the touch.

6. Turn it out of the tin and leave it to dry out for 1 - 1½ hours, until completely cool.

7. Reduce the heat of the oven to 120 degrees Celsius. Using a serrated knife, slice the loaf into 30 thin wafers.

8. Arrange the wafers in a single layer on baking sheets and bake them for 45 minutes or until dry and crisp. Do not let them go brown.

9. Using a palette knife, transfer the wafers to wire racks to cool. Store them in an airtight container.
