Fresh Citrus Jelly
About Fresh Citrus Jelly
Fresh fruit jellies really are worth the effort – they’re packed with fresh flavour, natural, natural colour and vitamins – and they make a lovely fat-free dessert.
INGREDIENTS
3 medium-size oranges
1 lemon
1 lime
300cm / 1¼ cups water
75 gm golden caster sugar
15ml / 1 tablespoon / 1 sachet powdered gelatine
extra slices of fruit, to decorate
1. With a sharp knife, cut all the peel and white pith from one orange and carefully remove the segments. Arrange the segments in the base of a 900ml/3¾ cup mould or dish.
2. Remove some shreds of citrus rind with a zester and reserve them for the decoration. Grate all the remaining rind from the lemon and lime and one of the oranges. Place all the grated rind in a medium-size pan, with the water and sugar.
4. Strain the hot liquid into a measuring jug to remove the rind (you should have about 600ml/2½ cups: if necessary, make up the amount with water). Sprinkle the gelatine over the liquid and stir until it has completely dissolved.
5. Pour a little of the jelly over the orange segments and chill until set. Leave the remaining jelly at room temperature to cool, but do not allow it to set.
6. Pour the remaining cooled jelly into the dish and chill until set. To serve, turn out the jelly and decorate it with the reserved citrus rind shreds and slices of citrus fruit.
