About Rosé
A rosé (From French: “Rosé”, Pinkish) is a type of wine that has some of the colour typical of a red wine, but only enough to turn it pink. The pink colour range from a pale orange to a vivid near-purple, depending on the grapes and wine making techniques. Weißherbst is a type of German rosé made from only one variety of grape.
About Amaretti biscuit
The original amaretti biscuits from the town of Saronno north of Milan. The history of this product dates back to the early 1700s, when a Milanese bishop or cardinal surprised the town of Saronno with a visit. A young couple, welcomed him and paid tribute with an original confection of baked biscuits made of sugar, egg whites, and crushed apricot kernels or almonds. Blessing the couple with long and happy life resulting in the preservation of the secret recipe over many generations.
INGREDIENTS
Serves 6
750 ml / 26 fl oz rosé
200 gm / 7 oz caster sugar
2 cinnamon sticks, broken in half
6 peaches
6 amaretti biscuits
1. Combine wine, sugar and cinnamon sticks in a saucepan.
2. Bring to the boil, simmer until it no longer smells alcoholic, or until slightly reduced in volume, around 10 minutes. Allow to cool.
3. Peel peaches by lightly cutting the skin from top to bottom and immersing in a pot of simmering water for 5 seconds.
4. Dunk into a bowl of cold water and peel off skin.
5. Arrange peaches snugly in a high-sided glass dish.
6. Top with rosé, and chill for 3 hours.
7. Turn peaches 2 or 3 times during the 3 hours, as they take on the colour of the wine.
8. Serve each person one peach, very chilled, with a few spoonfuls of rosé around it.
9. Crush amaretti biscuits into crumbs and scatter on top of each peach.
Tips:
On a really, really hot day, just pour the rosé over the peeled peaches and chill well before serving. It is totally refreshing because the only sweetness comes from the fruit itself.
