About Fudge Cake
A fudge cake is a small chocolate pastry that contains fudge. They are shaped as small round cakes, hence the name. “This is also known as “Death By Chocolate, if topped with chocolate ice cream and lashings of whipped cream.” In addition to Death By Chocolate, there are many variations to it. One variation is the pudding fudge cake. To make the pudding variation, you mix these ingredients: chocolate cake mix, chocolate pudding chocolate chips.
INGREDIENTS
Serves 4
For the chocolate cake base
3 eggs
75 gm caster sugar
60 gm flour
¼ teaspoon baking soda
15 gm cocoa powder
2 tablespoons butter, melted in a bowl over simmering water
For the chocolate butter cream
113 gm baking chocolate, finely chopped
½ cup whipping cream
225 gm butter
170gm icing sugar, sifted
For the ganache
170 gm chocolate, finely chopped
¾ cup whipping cream (bring the cream to the boil, add chocolate until melted)
For garnish
50 gm chocolate shavings
1. Preheat the oven to 190 degrees Celsius. Grease and line a loaf tin.
2. To prepare the chocolate cake base, whisk eggs and sugar in a large bowl until the mixture is thick and pale yellow.
3. Beat in the sift flour, baking soda and cocoa powder. Blend well.
4. Pour in the melted butter, blend well.
5. Pour the mixture into the prepared tin and level out.
6. Bake in the oven for 15 to 20 minutes. Leave the cake to cool.
7. To prepare the chocolate butter cream, bring the whipping to the boil, then add in the chopped chocolate, whisk until the chocolate has melted and the ingredients have amalgamated. Leave to cool.
8. Put the butter in another bowl and pour in the icing sugar, whisking until soft.
9. Pour in the cooled chocolate mixture, whisk until the mixture is smooth. Set aside.
10. Remove the chocolate cake from the tin, split in three equal horizontally.
11. Spread the cut surface with the chocolate butter cream, then use to sandwich the three cakes together.
12. Spread the remaining chocolate butter cream on the sides; smooth the sides with a plastic scraper. Chill for a while.
13. Pour the ganache over the cake.
14. Garnish with chocolate shavings.
15. To serve, cut into slices.
