About Frozen Chocolate Bananas

The frozen chocolate bananas are truly sensational – better than an ice cream or a sorbet. First, you bite into crisp frozen chocolate and then meet the beautifully fragrant, iced bananas. Heaven.

INGREDIENTS
Makes 12

150 gm / 5 oz good-quality milk chocolate, broken into small pieces
250 gm / 9 oz / 2 medium bananas
6 bamboo skewers

To serve

nuts, chopped (optional)

1. Line a baking tray with baking parchment, and cut each bamboo skewer in half, using scissors, and snip off the sharp points.

2. Peel the bananas, then slicing sharply on the diagonal to produce long oval slices, cut each one into 6, each slice about 1-cm / ½-inch wide, discarding the end bits or, more likely, eating them!.

3. Insert one of the bamboo skewers into each one banana slice carefully and place them on the parchment-lined tray then pop it in the freezer for 30 minutes.

4. Meanwhile, melt the chocolate. Place in a heatproof bowl over a pan of barely simmering water, making sure the bottom of the bowl doesn’t touch the water. Remove it from the heat and allow to cool.

5. Remove the banana slices from the freezer and, taking each one in turn, half-dip them into the melted chocolate, and then dip in chopped nuts, if using, leaving some banana uncovered at the base to give it a kind of two-tone effect. The chocolate will set almost instantly on the frozen banana.

6. Place the coated bananas all back on the tray and return them to the freezer until you are ready to eat,

7. Serve straight from the freezer.

Tips:

You can pack these frozen chocolate bananas in layers between sheets of parchment paper in polythene boxes, and keep them frozen so you have a little stock on tap for whenever you feel like a treat.
