Ginger-Glazed Pineapple
About Ginger-Glazed Pineapple
Ginger is used in the glaze to enhance the hot, caramelised pineapple, giving it a subtle, fresh dimension.
INGREDIENTS
2 medium ripe pineapples
30 ml / 2 tablespoons light soft brown (muscovado) sugar
10 ml /2 teaspoons ground ginger
low-fat yogurt, to serve
5 ml / 1 teaspoon runny honey (optional)
Ground ginger, for dusting
1. Cut both pineapples into four lengthways, keeping the stalk on. Remove the fibrous core and, to give a neat appearance to the finished dish, use a large, serrated knife to cut the flesh away from the skin – this will keep the shape of the pineapple. Reserve the skin ‘shells’. Cut the flesh into pieces and return to the pineapple ‘shell’. Wrap the green leaves of the stalk in foil so that they don’t burn while grilling. Mix the brown sugar and ground ginger together.
2. Sprinkle each pineapple quarter with the sugar mixture. Place on foil-lined baking sheets and cook under a preheated grill for 10 minutes or until golden and caramelised.
3. Mix the yogurt with the runny honey, if using. Serve the pineapple with the yogurt and dust with ground ginger.
