Honey-Mousse

Honey Mousse


About Mousse
Mousse is mainly made of egg white, milk or whipping cream and generally served in small cups and glasses.

It has a smooth texture which gives out a sweet flavour when melted in the mouth.


Its taste can be further enriched with the addition of fruit sauce or chocolate.

And who said sweet things can't be healthy? The mousse is rich in protein, minerals, and vitamin A, B and D.

INGREDIENTS
Serves 6 – 8 glasses
3 egg yolks
3 egg whites
½ cup clear honey
6 tablespoons lemon juice
2 tablespoons gelatin
1½ cups whipping cream


1. Place egg yolks in stainless steel or copper pot. Add honey. Whisk over hot water until foamy.
2.
Mix lemon juice and gelatin powder in a small bowl. Put in hot water to dissolve, and fold into mixture 1.
3.
Whisk whipping cream and egg white separately until stiff, and fold in gently.
4. Put in a piping bag, pipe the mousse into glasses and chill for several hours in the refrigerator until serving.

5. Drizzle with honey and serve at once.


Tips:

1. Serve as soon as possible as mousse will fall if kept too long.
2. For best results, don’t cook honey too long, because overheating affects its flavour.

I make a 3 ingredient mousse- 4oz semisweet chocolate, 4 eggs, and a tblspn of water. Can you still pipe it into serving glasses and refrigerate the same way for your recipe?
