Ice-cream Pancake
About dragon fruit
Pitaya or pitahaya is the fruit of several cactus species, most importantly of the genus (sweet pitayas). These fruit are commonly known as dragon fruit – Chinese huŏ lóng guŏ “fire dragon fruit” and lóng zhū guŏ “dragon pearl fruit”, or Vietnamese thanh long (green dragon). Other vernacular names are strawberry pear or nanettikfruit.
Dragon fruit is rich in nutrients and can help to prevent degenerate of brain cells and thus suppressing Alzheimer’s disease. It is also useful to trim up the body, lower blood sugar level and facilitate digestion.
INGREDIENTS
Makes 2
2 dragon fruits
1 cup sesame ice-cream
2 eggs
100 ml full milk
50 gm flour
1 tablespoon corn oil
2 dried turnip, cut into long strips
2 carrot sticks
1. For the filling. Peel the dragon fruits, leaving them whole, then cut off a slice just below the top. Hollow out the centers.
2. Fill the dragon fruits with the sesame ice-cream, then cover and freeze for several hours, or until firm.
3. To make the pancakes, beat together the egg and sugar, then gradually beat in milk and flour alternately to give a thick cream consistency. Stir in corn oil.
4. Heat a small crepe pan or omelette pan until hot, pour half of the batter into the pan, then tip the pan to coat the base evenly. Cook for about 30 seconds until the underside of the pancake is golden.
5. Flip the pancake over and cook the other side until lightly golden.
6. Repeat to make 2 pancakes, Stack the pancakes as you make them between a sheet of greaseproof paper. Leave to cool.
7. Wrap dragon fruit ice-cream with a pancake and then tie with a carrot stick tightly.
8. Put oil in a heavy frying pan and heat until hot, but not smoking. Deep fry the ice-cream pan cake until crispy.
9. Serve immediately.
Tips:
1. You may change the combination of fresh fruit and ice-cream to your taste.
2. Fresh fruit ice-cream can be prepared one or two days in advance and store in the refrigerator. You may then wrap it with a pancake and deep-fry it right before serving.
