About Granita / Italian Ice
Granita is a grainy frozen mixture of sugar, water and a flavoured liquid, such as coffee, lemon juice or even melted chocolate. Granita is a Sicilian specialty that was originally made with the pressed snow from Mt. Etna. The snow was kept in the caves and scooped up during summer.
INGREDIENTS
Serves 2
1 sprig verbena
90 gm granulated sugar
1 cup spring water
2 organic lemons
1. Wash and drain the verbena, and remove the leaves.
2. Place the water and sugar in a small pan, bring to a boil, lower the heat, and simmer until reduced by one-fourth.
3. Add the verbena leave to the syrup, cool, and strain.
4. Squeeze the lemons and stir the juice into the cooled syrup. Pour this mixture into an ice-cube tray and chill in the freezer for 2 hours.
5. As the mixture freezes, break it up from time to time with a fork. Scoop into parfait glasses and serve immediately.
Tips:
1. Place the parfait glasses in the freezer for a few minutes just before serving.
2. Granitas should be served well chilled.
