One-Mix Chocolate Sponge
About Sponge
A sponge is a light cake or pudding made from flour, eggs, sugar and margarine (butter or vegetable oil).
For family teas and ever-open mouths, quick and easy favourites, like this chocolate cake, are invaluable.
INGREDIENTS
SERVES 8 - 10
175 gm soft margarine, at room temperature
115 gm / ½ cup caster sugar
50 gm / 4 tablespoons golden syrup
175 gm / 1½ cups self-raising flour, sifted
45 ml / 3 tablespoons cocoa, sifted
2.5 ml / ½ teaspoon salt
3 eggs, beaten
little milk (optional)
150 ml whipping cream
15 – 30 ml / 1 – 2 tablespoons fine shred marmalade
sifted icing sugar, to decorate
1. Preheat the oven to 180 degrees Celsius. Lightly grease or line two 18-cm / 7-in sandwich tins.
2. Place the margarine, sugar, syrup, flour, cocoa, salt and eggs in a large bowl or food processor and cream together until well blended. (In a processor use the slowest speed or frequent short bursts.) If the mixture seems a little thick, stir in 15 – 30 ml / 1 – 2 tablespoon milk, until you have a soft dropping consistency.
3. Spoon the mixture into the prepared tins and bake for about 30 minutes, changing shelves if necessary after 15 minutes, until the tops are just firm and the cakes are springy to the touch.
4. Leave the cakes to cool for 5 minutes, then remove from the tins and leave to cool completely on a wire rack.
5. Whip the cream and fold in the marmalade, then use to sandwich the two cakes together and sprinkle the top with sifted icing sugar.
