Red Bean Paste cake


About red bean paste

Red bean paste or Azuki bean paste is a sweet, dark red bean paste originating from China. It is used in Chinese cuisine, Japanese confectionery, and Korean cuisine. It is prepared by boiling and mashing azuki beans and then sweetening the paste with sugar or honey. The husk of the beans may be removed by sieving before sweetening, which leads to a smoother and more homogeneous paste.





INGREDIENTS
Makes 2 paste cakes



50 gm red bean paste


For pizza bread


50 gm flour
50 ml milk
1 egg, beaten
1.2 tablespoons salt



For butter and flour cubes

50 gm flour
50 gm sugar
50 gm butter, diced



For granish


Icing sugar, as need


1. Preheat the oven to 180ºC.

2. To make the pizza bread, sift the flour and salt together in a mixing bowl.

3. Make a well in the center, then stir in the egg and sufficient milk to give a thick cream consistency.

4. Put oil in the heavy-based frying pan and heat until hot, but not smoking (to test, drop a scrap of pastry into the oil; if the oil sizzles, it is hot enough).

5. Spoon half the mixture into the frying pan and fry for about 1½ minutes on each side, until golden, make two pizza bread.



6. Drain the pancakes briefly on kitchen paper, set aside.

7. For the butter and flour cubes, sift the flour and sugar into a bowl.

8. Toss the butter in the flour mixture, then tub it in until the mixture resembles breadcrumbs, set aside.

9. Place the two pizza bread in a baking tray.

10. Place a tablespoonful of the red bean paste in the center of each pizza bread round.

11. Spread the butter flour cubes on top.



12. Bake for 15-20 minutes, until golen browned.

13. Sift icing sugar over the top before eating hot, warm or cold.
