About Chocolate Brownies

A chocolate brownie, also known as a brownie or a Boston brownie, is a small, rich, chocolate, baked cake-slice, named after its brown colour.

Brownies may contain nuts, particularly walnuts. The first known mention of a brownie is believed to be in the 1897 Sears catalog. Brownies often have an icing, popular flavours being either vanilla or mint extract.



About Walnuts

Walnuts are plants in the family Juglandaceae. They are deciduous trees. The word walnut derives from Old English wealhhnutu, literally “foreign nut”, wealh meaning “foreign” (wealh is akin to the terms Welsh and Vlach). The walnut was so called because it was introduced from Gaul and Italy. The previous Latin name for the walnut was nux Gallica, “Gallic nut”.

INGREDIENTS
Makes 20 squares


250 gm / 9 oz dark bitter chocolate, chopped
175 gm / 6 oz butter
175 gm / 6 oz white sugar
3 eggs
½ teaspoon vanilla extract
100 gm / 3½ oz walnuts, roughly chopped
100 gm / 3½ oz plain flour
1 level teaspoon baking powder



1. Heat oven to 350ºF / 180ºC.

2. Butter a cake tin or baking tray measuring 25 cm by 30 cm (10 in by 12 in).

3. Melt chocolate and butter in a heat-proof bowl set over a pot of gently simmering water, stirring occasionally.

4. Remove from the heat, and allow to cool for 10 minutes.

5. Beat sugar and eggs in a large bowl until pale and creamy.

6. Fold chocolate mixture into egg mixture.

7. Add vanilla extract and walnuts, and stir well.

8. Sift in flour and baking powder, and fold gently until just mixed.

9. Pour mixture into tin.

10. Bake for 30 – 35 minutes, or until a skewer inserted in centre comes out moist but not wet.

11. Allow to cool in tin, then cut into squares and remove from tin.

12. Pile high to serve and dust with icing sugar.
