Simple Tiramisu
INGREDIENTS
Serves 4
225 gm mascarpone cheese
25 gm icing sugar, sifted
150 ml strong brewed coffee, chilled
300 ml double cream
125gm sponge finger biscuits
50 gm plain dark chocolate, grated or made into small curls
cocoa powder, sifted
1. Lightly oil and line a 900 gm (2 lb) loaf tin with a piece of Clingfilm. Put the mascarpone cheese and icing sugar into a large bowl and using a rubber spatula, beat until smooth. Stir in 2 tablespoons of chilled coffee and mix thoroughly.
2. Whip the cream with 1 tablespoon of the coffee liqueur until thickened. Stir a spoonful of the cream into the mascarpone mixture, then fold in the rest. Spoon half of the mascarpone mixture into the prepared loaf tin and smooth the top.
3. Put the remaining coffee and coffee liqueurs into a shallow dish just bigger then the biscuits. Using half of the biscuits, dip one side of each biscuit into the coffee mixture, then arrange on top of the mascarpone mixture in a single layer. Spoon the rest of the mascarpone mixture over the biscuits and smooth the top.
4. Dip the remaining biscuits in the coffee mixture and arrange on top of the mascarpone mixture. Drizzle with any remaining coffee mixture. Cover and chill in the refrigerator for 4 hours.
5. Carefully turn the tiramisu out onto a large serving plate and sprinkle with the grated chocolate or chocolate curls. Dust with cocoa powder, cut into slices and serve.
Tips:
Use amaretto instead of coffee liqueur for added variety.
