Sweet and Sour Zucchini
About zucchini
Zucchini or courgette is a small summer squash. Along with some other squashes, it belongs to the species Cucurbita pepo. The zucchini can be yellow, green or light green, and generally has a similar shape to a ridged cucumber, though a few cultivars are available that produce round or bottle-shaped fruit.
Zucchini taste sweeter and crunchier than normal cucumber.
INGREDIENTS
2 zucchini
1 chili
1 tablespoon vinegar
1 tablespoon sugar
2 teaspoons sesame oil
1 teaspoon salt
1. Wash and slice zucchini into thick pieces.
2. Marinate zucchini with coarse salt. Remove excess water afterwards.
3. Shred chili
4. Place shredded chili in a mixing bowl.
5. Add in sugar, vinegar and sesame oil, mix well.
6. Add in zucchini.
7. Chill in fridge.
8. Serve cold.
