About Sweet Beans on Ice Flakes
This refreshing, chilled dessert, unique to Korea, crunchy ice flakes are coated with a puree of red beans and maple syrup, and then topped with fresh fruit. This is unquestionably the most popular choice for a hot summer’s day.
INGREDIENTS
Serves 2
80 gm / 3 oz / ½ cups red kidney beans, soaked overnight
115 gm / 4 oz / ½ cup sugar
5 ml / 1 teaspoon salt
30 ml / 2 tablespoons maple syrup
ice cubes
30 ml / 2 tablespoons condensed milk
90 ml / 6 tablespoons milk
1 kiwi fruit, sliced
2 strawberries
1. Place the red beans in a pan, cover with water and bring to the boil.
2. Boil fast for 10 minutes, then simmer until the beans have softened.
3. Drain and leave to cool, then roll them between the palms of your hands to remove the skins.
4. Put the peeled beans, sugar, salt and maple syrup into a food processor or blender and purée to a fine paste.
5. Put the purée beans into a pan and simmer until the paste has reduced to the consistency of custard. Cool, then chill.
6. Use an ice crusher, food processor or blender to crush the ice into flake (you will need 2 litres / 3½ pints / 8 cups of flakes) and transfer them to a serving bowl.
7. Mix the condensed milk and milk in a jug (pitcher) and pour over the ice flakes in the bowl.
8. Just before serve, pour the bean paste over the top and decorate with the kiwi fruit and strawberries.
