Tiramisu


About Tiramisu
Tiramisu means “pick me up” in Italian. It is usually made up of a layer of sponge fingers, which are soaked in coffee and some kind of liqueur (i.e. mixture of Kahlua and Bailey's). A layer of rich creamy Mascarpone cheese mixture is then laid over the sponge fingers finished with a dusting of cocoa powder.

INGREDIENTS
Serves 4 glasses

4 egg yolks
100 gm castor sugar
¼ teaspoon vanilla essence
250 gm mascarpone cheese
2/3 cup fresh cream
½ cup espresso coffee
3 tablespoons Marsala wine or Kahlua
3 tablespoon Brandy or Bailey's
150 – 200 gm sponge fingers
2 tablespoon cocoa powder, sifted


1. Put the egg yolks, castor sugar and vanilla essence into a large bowl and whisk until the mixture is thick, pale and creamy. Gradually fold in the softened mascarpone cheese to egg mixture. Stirring until the mixture thickens.
2. Whip the cream until it forms soft peaks, and then fold into the cheese mixture.
3. Break the sponge finger biscuits in half, and then slice it thinly. Place the espresso coffee, Marsala wine and Brandy into a shallow dish and stir well. Place half the sponge fingers into the mixture and soak for 30 seconds. Remove from the liquor and arrange in the bases of the serving glasses.
4. Spoon the cheese mixture over the biscuits in the glasses until half full and sprinkle with the half the sifted cocoa powder.

5. Place the remaining biscuits into the coffee liquor and soak for 30 seconds, then arrange on top of the cheese mixture in a single layer. Spoon the rest of the cheese mixture over the biscuits until full.
6. Freeze for 1 – 2 hours until set. Dust the top with cocoa powder and serve.

Tips:
Do not over beat the Mascarpone cheese as it becomes very runny.

I tried to make tiramisu once.

The mascarpone was expensive.

The ladyfingers were hard to find and went soggy.

It did not hold its shape overly well.

Might take some of your advice!!!!!!!! (since it is a beautiful beautiful thing)

Yes, I agree. Mascarpone cheese can be relatively expensive for a small tub. However, there isn't a substitute for this ingredient for this particular dessert.

Try proper sponge fingers instead of ladyfingers next time. I will post the brand of the sponge fingers and mascarpone cheese that I use for you a bit later.

Thanks for your comments. I see you don't like the colours, but I am still experimenting with the colours of my blog so hopefully the next time you visit, you will like the colours a lot better.
